Will this LCD with with a parallel interface?

The short answer is no. The display is SPI but an I2c module is attached and connected through header pins which you would have to remove drive via SPI.

Is this readable in daylight?

Very much so when the display contrast is properly set.

I2C library , I believe. Also use one of the free, available arduino programs to find exact hex address. I used google to get the info. . They work fine.

is the i2c converter attached or do I need to solder it on?

The I2C module is attached to the LCD PCB. No soldering is needed. The I2C board has a 4 right angle header pins to connect to the CPU for power, ground, data and clock.
